One of the joys of the local varieties are the wide range of uses they have – some of the apples will retain their shape when they bake, others relax into a gorgeous fluffy syrup whilst others are firm, crisp and pink and just ask to be put into salads – and that’s just the apples…

A link to our past and often with a particular resonance or association with particular relations, recipes are part of the fruit growing tradition we are keen to see saved and indeed revitalised through experimentation and sharing of ideas.
