One of the joys of local varieties is the wide range of uses they have – some of the apples will retain their shape when they bake, others relax into a gorgeous fluffy syrup whilst others are firm, crisp and pink and just ask to be put into salads – and that’s just the apples…

A link to our past and often with a particular resonance or association with particular people and places, recipes are part of the fruit growing tradition we are keen to see saved and indeed revitalised through experimentation and sharing of ideas.

Meanwhile here are a couple of recipes to get you started.

Spicy Apple Muffins

Makes 18

  • 18oz (510g) self raising flour
  • 3tsp cinnamon, ½tsp nutmeg, ½tsp ginger
  • 6oz (170g) sugar
  • 12oz (340g) finely chopped apple – local if possible!
  • 10floz (300ml) milk
  • 3oz (85g) welsh butter, melted
  • 6oz (170g) raisins/sultanas
  • 6 tablespoons soft brown sugar for topping
  • Preheat the oven to 180-200 C
  • Sift together the flour, spices and sugar
  • In a separate saucepan, pour in the milk, add the apple and finally the melted butter
  • Pour this mixture into the flour, spice and sugar mix
  • Stir until the mixture combines and add dried fruit in last few stirs
  • Spoon into tins and sprinkle on the sugar topping
  • Bake for about 20 – 25 minutes until lightly brown
  • Allow to cool
